Irish
Hill Foods was founded in 1983 by Louisville natives Tom Dawson
and John Baker to provide Kentucky’s restaurants with
the freshest and highest quality beef, veal, pork, poultry
and lamb products.
Tom
and John’s expertise reflects a combined 60 years experience
with Louisville’s Dawson-Baker Packing Company, a company
with a worldwide reputation for producing high quality meats.
Working
with Dawson-Baker’s worldwide customer base provided
them with a solid foundation in customer support and taught
them that the descriptive phrase “world recognized high
quality” applies to both products and service.
From
that experience with Dawson-Baker and thanks to its dedicated,
veteran staff and high standards of quality, service and value,
Irish Hill Foods has grown into the region’s premier
distributor of quality meat products.

States Department of Agriculture (USDA) has controlled meat
inspection for more than 80 years. Most people know that the
USDA rates the physical characteristics of the meat, but they
also monitor product safety.
The
USDA has set the highest standards in the world and Irish
Hill Foods has been part of the program from our beginning.
There are federal meet inspectors in our plant every day.
If we don’t meet the standards they set forth, they
would close our doors.
At Irish
Hill Foods, food safety is our highest priority. Our HACCP
plan, Hazard Analysis Critical Control Point, is more stringent
than USDA requirements. Our HACCP establishes controls to
ensure that our products will be shipped to our customers
in the highest quality condition.
